This sounded like so much fun, and of course I love pretty things.
Today, I'm sharing Lemon Cookies.
I had the urge this week to make something sweet but tart, and use the lemons I've had sitting in the fruit basket.
Ta-da! Lemon Cookies!
Here's what you need:
1 stick unsalted butter, room temperature
3/4 cup granulated sugar
Lemon juice (from 1/2 a lemon)
Lemon zest (from a whole lemon)
1/2 tsp vanilla
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 1/4 cup flour
Here's what you do:
Preheat oven to 350F
Cream butter and sugar
Add lemon juice, zest, egg, & vanilla
don't you just love this measuring spoon? it sits flat on the counter!
Sift in flour, baking powder, baking soda, and salt then mix
Refrigerate dough for approximately 20 minutes.
I didn't do this and think the cookies would form better if the dough is slightly chilled.
Drop by teaspoon-fulls onto cookie sheet
I love using my cookie scoop- it's so easy and makes perfect scoops. A spoon will work just fine, though!
Bake for 10-12 minutes. Edges should be slightly brown.
Let cool for a couple minutes, then transfer to wire rack.
Let cookies cool completely.
I think the cookies taste great without the glaze but if you are a glaze/frosting type of person, you might enjoy this last step.
Mix ~1/2 cup powdered sugar and juice from 1/2 lemon together to form a paste.
Drizzle over cooled cookies.
These taste like sugar cookies with a hint of lemon tart-ness. Perfect for summer!
